To begin you will need to cut down your Back ribs into single individual rib portions. This is very easy, just take your sharp knife and cut in between the bones. Next, apply your favourite BBQ rub to all the sides of your ribs - we recommend going a bit lighter then normal since you will be covering all 4 sides of the rib pieces. Pro Tip: Over seasoning your rib singles with your rub may result in the ribs being a bit salty so heads up on that! With this done set up your grill between 250-275 degrees..

With your grill up to temperature, place the ribs opposite the coals and place on some hickory or hardwood of your choice. Close the lid and begin cooking and smoking your ribs. After the ribs had been smoking for 1.5 hours, open up the grill and give them a spritz with a combination of half water, half apple cider vinegar. Then flip the ribs to promote even cooking and color. Lastly give them one last spritz and then close the lid and continue to smoke.

While your waiting for your pork back ribs to finish cooking, go ahead and mix together your Alabama White Sauce. Once mixed together place in the fridge until you are ready to use it.

After around 3 hours of cooking your ribs should be done. At this point, remove the from the grill and place them into a large bowl. Next, add in your Alabama White Sauce and give the ribs a toss to coat all the sides. Once the ribs have been sauced place them back on the grill for another 5-10 minutes to build that layer of flavour. After a few minutes on the grill, remove them from the BBQ and plate them up. Drizzle a little bit extra Alabama White Sauce on top and then dig in and enjoy the feast!
