To prepare your Prime rib, you will trim up any unwanted fat or sections that might be falling off. Next mix together your wet rub with the olive oil, garlic, rosemary and salt then rub it around the entire surface of the prime rib. Next, take your Beef style BBQ Rub and apply a light coating onto the outside to add some extra flavour and help build a bit of a bark on the outside.
Once your prime rib has been prepped, place your hooks into the top portion along with your digital thermometer and place it into the pit barrel cooker.. With this cook, we added some hickory and let it cook around 275F.
After around 2.5 hours (depending on the size of the prime rib), your prime rib should be hitting between 125-130. Pull it off at your desired doneness... For us, we pulled it at 128 and let it carry overcook to around 132F.
After you have pulled it out of the pit barrel cooker, let it rest for about 15 minutes before slicing into it and enjoying your smoked prime rib roast!
