To prepare your Pork Tenderloin for smoking on the grill, first remove any silver skin as well as any unwanted section of the pork tenderloin that my burn or fall off. Once your tenderloin has been cleaned up, it's now to season your meat. To do this, apply a light coating of olive oil to the outside of the pork tenderloin then apply your favourite BBQ Rub. On these pork tenderloins we used our Postal Barbecue Original Rub as well as "Sweet Heat" from Daddy Dutch BBQ on youtube.
Once your pork tenderloin has been seasoned with your favourite BBQ rub, place it off to the side while you either light your grill and bring it up to tempreture OR to give you time to make your homemade Mango Salsa which we topped on our pork tenderloin. To Make the Homemade Mango Salsa, combine all your ingredients into mixing bowl and mix together well. Once your mango salsa has been completed, place it into the fridge to allow the flavours to blend well together. We recommend at least 30 minutes prior to eating.
With everything prepare it's time to light your grill and bring up to a cooking tempreture of around 275F degrees. Once your grill has come up to tempreture, place the seasoned pork tenderloin onto the grill opposite the coals. Next, add in some optional wood onto the coals to provide some extra smoky flavour to your tenderloin. Close the lid and begin cooking until you have reached an internal tempreture of 130F.
Once your smoked pork tenderloin has reached 130F internal tempreture, open the grill and brush on your go to BBQ sauce for added flavour! Be careful not to brush off the seasoning/BBQ Rub. Once it has been sauced, close the lid and continue to cook your tenderloin until it has reached between 140F-145F. Once it reaches 140F or slightly above, remove the pork tenderloin from the grill and let it rest. As it rest, the tenderloin will continue to rise in tempreture and will settle around 145F which is a perfect doneness.
Top with your homemade mango salsa and your feast is ready!
