 1 tbsp Onion Powder
 1 tbsp Garlic Powder
 1 tbsp Black Pepper
 3 tbsp Yellow Mustard
  cup Apple Cider Vinegar

Directions

Step #1
1

To start making these smoked pork belly skewers (or essentially pork belly burnt end skewers) begin by cutting your slab of pork belly into strips that are around 1 1/4 inces wide by about 5 inces long. This is the ideal size as it will turn into about 3-4 bites per skewer. Once your pork belly has been cut, place the pork belly strips onto skewers and coat with your favourite sweet BBQ Rub. On this cook we used our Postal Barbecue Original Rub which was the perfect rub for this cook.

Step #2
2

Once your pork belly skewers have been seasoned, set up your grill for cooking indirect at around 250F. These can be done on virtually any grill, but just make sure to use indirect heat when cooking these. Once your grill is up to tempreture, place your pork belly skewers onto the grill opposite the coals and then add in a couple pieces of your favourite hardwood to add a bit of smoky flavour to your smoked pork belly skewers. When everything is in the grill, close the lid and begin cooking around 250F.

Step #3
3

While the pork belly skewers are cooking, gather all your ingredients to make your BBQ Sauce. This is a bit more of a tangy mustard sauce which was designed to go on these, and will help cut the richness of the pork belly meaning when they are all done you’ll be able to eat a little bit more without feeling weighed down! So mix together all your ingredients for your sauce over a low heat and then remove it from the heat and let it cool to room tempreture.

Step #4
4

After around 4 hours (time will vary depending on thickness of pork belly) your pork belly should be getting tender and ready to come off. Once it has hit the tenderness that you prefer, apply your BBQ sauce to the all sides of the pork belly skewers and brush it around. Once they have been sauced, close the lid again and continue to cook for an additional 7-10 minutes to allow the sauce to set up on your pork belly skewers. Once the sauce has set up, remove them from the grill, let them cool for a few minutes before digging in and enjoying your feast!
