Smoked Chicken Quarters with mango habanero sauce

Smoked chicken quarters are probably one of my favourite things to cook on the grill as an easy mid-week dinner idea.  They don’t take long and are always full of smoky rich flavour.  In this smoked chicken quarters recipe, we will be first smoking our chicken then finishing it off with a mango habanero sauce that was sent to us to try out from E.D.S – The Sauce Guys.  It paired really well with our Original rub and is a must-try combination. Everything you need is below.

Ingredients

 4 cups Chicken Leg Quarters
 1 tbsp Oil
 Postal Barbecue Original Rub
 Mango Habanero BBQ Sauce

Step #1

To prepare your chicken quarters to start by removing any unwanted fat and skin from the bottom side. Next, apply a little bit of oil to the outside of the chicken. This will act as a binder for our rub to stick to. After the oil, we applied our Postal Barbecue Original rub which goes great on chicken.

Once your chicken leg quarters have been seasoned, set up your grill for cooking between 325-350F. Once your grill is up to temperature, place the chicken legs onto the grill opposite the coals. Next, add in your favourite hardwood to add a little bit os smoke flavour, then close the lid and begin cooking until the chicken reaches an internal temperature of 170F. This should take around 50 minutes.

Once your chicken has reached 170F, open up the grill and apply your mango habanero bbq sauce (or sauce of your choice). After the sauce has been applied, close the lid and continue cooking for 5-10 minutes to allow the sauce to set up.

When your sauce is set, open up the grill and apply a second light coating of your bbq sauce to let that chicken shine.. Pull it off the grill and serve hot.
