This recipe is pretty simple to make and doesn't take a lot of time. You can either do it on a traditional propane flattop griddle or you can pull out the plancha and cooking these over coals which in my opinion is the better option. To get started I always recommend preparing all your ingredients since you won't have much time in between each step. So to start with slice your peppers into about 1/4 inch slices. Once your peppers are done, move along to your onion - you'll want to slice them a bit thinner than your peppers so they soften up nicely. Once those two ingredients are sliced, place them in a bowl and toss them with a little bit of olive oil followed by a light seasoning using our Mad Cow Rub.
With the veggies prepared, get your plancha or griddle set up for cooking with at least two zones: medium hot, and a cooler zone. With the griddle set up drizzle on a little bit of olive oil onto the plancha followed by your veggies. It's at this point you'll want to cook the veggies tossing them regularly until they are cooked through and have a bit of griddled color on them. Once the veggies are done move them off to the cool side of the plancha and then apply your ground sausage to the griddle. You'll want to cook it hot so that it gets a bit of extra color, also you'll want to keep it moving so that the sausage meat doesn't clump together. At the end you want kinda of a chunkier ground beef consistency.
With the Veggies and Sausage full cooked, mix both together and split the mix into two sections then apply your swiss cheese to the top. Close the lid for about 30 seconds to let the cheese melt. Once the cheese has melted to your liking, place your cut hoagie bun on top of the cheese and then with your large spatula flip everything over and into the bun. Once the sausage and peppers cheesesteak sandwiches are off the plancha, let them cool slightly before going in for that incredible first bite!
