Pulled Pork Breakfast Tacos

 Leftover Pulled Pork
 Eggs (1 per taco approx)
 Diced Onions
 Chopped Cilantro
 Postal Barbecue MAD COW rub
 Spicy Lime Mayo
 Pico
Spicy Lime Mayo
  cup Mayo
 ½ Lime
 Hot Sauce To Taste

To prepare your pulled pork breakfast tacos, begin by gathering all your ingredients together as this will be a really quick cook. Once you have all your ingredients, mix together your spicy lime mayo while your griddle is coming up to a medium low tempreture.

With your Griddle up to tempreture, start by warming your leftover pulled pork on the griddle. This will only take a minute or two – remember we are just warming it. Once it has been warmed, move it to the cool zone and pour on your whisked eggs onto the griddle. Stir and fold the eggs until they are mostly cooked, then season them with your favourite BBQ rub – We used our Mad Cow rub with goes really nicely on eggs. With your eggs done, move them to the cool zone and place down your corn tortillas to warm them up. This makes them more pliable and will keep them from breaking.

With all your ingredients cooked/warmed and ready to go, begin to build your pulled pork breakfast tacos. To do this we first placed on the pulled pork, followed by our egg. Next, top it with some red onions, pico, then drizzle your spicy lime mayo on top followed by some fresh cilantro.. mmmmm.. YUM!! Now, dig in because these breakfast tacos are sooo good!
