This honey jalapeno lime chicken wings recipe is simple to do and is going to make for a great feast, and when I say that I mean possibly the best wings you'll eat!. All you need is some chicken wings, baking powder, a rub of your choice and lastly your ingredients to make your Sauce. Once you have everything, begin to prepare your wings by coating your wings with baking powder - this is going to help crisp up the outside of the wings and help our sauce stick a bit later on in the cook. Next, apply your BBQ rub to the wings. Once the wings have been tossed in your bbq rub, let this sit for 10 minutes while you get your grill set up for cooking around 350F using the indirect cooking method.
With your grill set up for cooking at 350F, place your chicken wings onto the grill and then add in a small piece of hardwood for extra smoky flavour. Next close the grill lid and begin cooking your chicken wings. When it comes to cooking great wings I always recommend cooking them to between 185F-195F for the best texture. If you like yours cooked to the minimum tempreture of 165F then just adjust the cook times accordingly.
After about 30 minutes of cooking the wings are getting close to being finished. It's at this time you'll want to start to prepare your delicious honey jalapeno lime sauce! In a small skillet add in your butter, diced jalapenos, lime juice, and honey. I recommend adding the honey to taste. Once everything is in the skillet place it into the grill near the coals so that the butter can melt and the jalapenos soften. This should take 5-10 minutes depending how close to the coals you place the skillet.. Once the butter melts, give it a stir and a taste.. This is the point were you can add more honey as well as add some cayenne pepper for a little extra spice.
Once the wings reach around 185F and are golden and crispy, remove them from the grill and and toss the wings in yours honey jalapeno lime sauce until they are good and coated.. Remove from the bowl, serve hot and enjoy some of the best wings around!
