This recipe is all about those cajun flavours and when done right will be a HUGE hit. To start with you will need to find the larges shrimp available to you. Once you have your shrimp take a few minutes to peel and de vain your shrimp. If you purchased in store most likely they have already been de vained but if they are fresh caught or purchase straight from the boat you will want to take a knife and de vain each shrimp.

Once your shrimp have been de vained and peeled place them into a zip top bag or container. Next add 2-3 tbs of olive oil followed by 3 cloves of minced garlic. Lastly add in 1-2 tbs of cajun rub to the shrimp and mix it around well. Once you are happy with the shrimp marinade, close the container and place it into the fridge for 2 hours.

Once your shrimp have been marinaded for 2 hours it's now time to set up your grill for cooking direct over high heat. Once your grill is set up and ready for cooking, it's time to mix together your Cajun butter which is going to be used for your final glaze and dipping sauce. Mix your butter, garlic, and cajun seasoning into a bowl and place that over the coals off to the side to allow the butter to melt and take on those cajun flavours.

Next, slice your Lemon and place them directly over the coals. This will help deepen the flavour of the lemon and add a lot of depth to the final flavour.

With your Cajun butter and Lemon finished, it's now time to make your grilled shrimp skewers. To do this, first make your shrimp and sausage skewers then place them directly onto the grill using direct heat! You will want to cook the shrimp for around 2 minutes on each side for a total of approximately 4 minutes. It's important not to overcook your shrimp or it will end up a bit rubbery. Once your shrimp has been cooked for 4 minutes or they have reached an internal tempreture of around 145 it's time to remove them from the grill and brush them with your cajun butter. Once they have been brushed with your cajun butter remove them from the grill and serve hot!

Serve with a side of your remaining cajun butter and your grilled lemon.
