To prepare your breakfast skillet, I recommend gathering all your ingredients and preparing them in advance. Once everything has been chopped and diced warm up your pan on a medium heat.
After a few minutes, add your bacon into the skillet and begin cooking them to your preferred doneness. Once the bacon is finished add in your diced potatoes into the skillet with the bacon fat, then add a little bit of water to help cook the potatoes a little bit faster in the pan. When your potatoes are 90% done, add in your bell peppers and bacon and let everything cook for a minute just to help soften up the peppers slightly.
With the base of your one pan breakfast skillet done, remove it from direct heat to indirect heat then top it with a little bit of cheddar cheese followed by 3 to 4 eggs. Once the eggs are in the skillet, close the lid on the BBQ and let the eggs cook for around 10-12 minutes or until the eggs are just cooked on top. When done, remove from the grill, top with some fresh chives then dig in!
