This easy chicken tacos recipe only takes a few minutes to prepare and about the same amount of time to cook up which is one of the reasons it's such a great recipe. To start off with you will want to take your chicken of choice and cube it up into about 1/2 inch pieces. Our preference is to use chicken thighs because it is a dark meat which has more flavour and a bit more fatty which means it will be more juicy after it's been cooked. Once your chicken has been cubed up, place them into a ziplock back along with your Chicken marinade. Once everything is in the ziplock bag begin to massage it all around covering the chicken fully. Once it has been mixed together, place it into the fridge to marinade the chicken pieces. It is recommended to marinade the chicken for 2 hours or even overnight for best flavour.
While your chicken is marinating in the fridge, it's now time to mix together your spicy lime crema. To make this combine your Mayonnaise and sour cream together followed by your lime, hot sauce, and salt.. Once everything is mixed together, give it a taste and add more lime and hotsauce as needed. The sauce will be thin and easy to squeeze on top of your tacos at then end. When you are satisfied with your sauce, place it in the fridge until it's time to build your tacos.
After your Chicken has marinaded, it's now time to cook your chicken pieces. To do this, one of the easiest ways is to cook them on a large flattop griddle. Using a larger griddle will allow you to do everything together which is very convenient. With your griddle preheated to around 400F, place your chicken onto the griddle and begin cook it through fully. Once fully cooked, either remove from the griddle or slide it over to your cool section of the griddle. Next place on your corn tortillas onto the griddle to warm and tighten up - this will cause the torilla shells to hold together better and not fall apart.
With everything cooked and finished on the griddle its now time for the fun part, building your tacos the way you like them. For this recipe, we started off with a bit of shredded cabbage then placed on your chicken followed but pickled red onions and cilantro. Lastly squeeze on your spicy lime crema and a little bit of hot sauce of your choosing. That's it.... You have officially made this easy chicken tacos recipe!
