To prepare your Dill Pickle Brined Chicken Wings, you first of all want to mix up your pickle brine by adding into a zip top bag your chopped cloves of garlic, chopped dill, along with your pickle juice. Once in a bag, mix everything together then add in your chicken wings to the bag. With your chicken in the brine close up the bag removing as much air as possible then massage the wings around in the bag making sure to coat the wings well. Next, place the wings into the fridge for 2-4 hours to allow them to take on the flavour of the pickle brine.
With your wings brined, remove them from the bag and with some paper towel dry the outside of the wings well. You want as much of the moisture off the outside surface of the wings so that it allows the skin to dry out the wings as they cook allowing them to become more crispy and extra delicious! Once the wings have been dried, apply a thin coating of your favourite wing rub. On these we used our CHICK'N rub which goes amazing on wings! With your wings seasoned with your bbq rub, place them on opposite the coals and begin cooking them at around 350F.
While the wings are cooking, now is the time to mix together your spicy dill pickle dipping sauce. Combine your Mayo, Sour Cream, pickle juice, Dill, Garlic, Salt and hot sauce into a mixing bowl to mix well. NOTE: Add as much or as little hot sauce as you like. A spicy dill pickle dip is a nice compliment to these wings. Once mixed together place in the fridge until your wings have finished.
After 20 minutes of cooking your chicken wings, give them a flip to help promote some even cooking and color formation. Repeat this step again, flipping the wings at the 40 minute mark. Once the wings have hit around 60 minutes of cooking your wings should be sitting between 185F-190F which is the perfect doneness for wings. Remove from the grill and serve hot with the side of your creamy dill pickle dip. Enjoy!
