To get started with this cedar plank chicken recipe, you will first want to start by soaking your wood plank in water for 1-2 hours prior to cooking your chicken leg quarters.
With your wood plank soaked, begin to prepare your chicken legs quarters by cleaning up each piece. Do this by removing any unwanted fat as well as by removing the rib cage so that you have a nice clean bit once cooked. After the chicken quarters are trimmed up, apply your favourite BBQ Rub. On our leg quarters we used out Postal Barbecue CHICK'N Rub which goes inredible well with this recipe. If you don't have the CHICK'N rub use whatever is your preferred BBQ rub for chicken.
Once the chicken has been seasoned with your BBQ rub on both sides, place them onto the cedar plank to prepare for cooking.
With your chicken quarters prepared, it's now time to set up your grill for cooking around 350F. To do this I lit a full chimney basket of briquettes and I got those coals mostly lit. Next, I dumped them into the grill on top of the charcoal grate and placed them over 2/3 of the bottom grate. Lastly I closed the lid and let the tempreture come up to 350F.
Once your grill is up to tempreture, place the cedar plank chicken directly over the hot zone and then close the lid and begin cooking for around 40-45 minutes. NOTE: Makes sure to work quickly and keep the lid closed so that the wood plank doesn't continuously catch fire.
While you cedar plank chicken is cooking on the grill, mix together all the ingredients for your homemade spicy mango BBQ sauce then let it simmer over low heat for about 5 minutes and then let cool down to a room tempreture.
Once the chicken quarters have reached and internal tempreture of around 175F open up the grill and quickly apply your BBQ sauce to your chicken quarters. This will give it a nice finishing look and added flavour to the leg quarters. After they have been sauced, close up the lid and continue to cook for another 5-10 minutes to allow your sauce to set up. When the sauce has set up, remove the cedar plank chicken from the grill and serve!
