Bacon Wrapped Sausages Recipe

Ingredients

 4 Sausages
 1 Package of Bacon
 5 Hoagie Rolls
 3 Onions Sliced
 ½ tbsp Brown Sugar
 1 tbsp Balsamic Reduction (add to taste)
 POSTAL BARBECUE ORIGINAL RUB
 Pickled Banana Peppers

To prepare your smoked bacon wrapped Sausages you will start out by wrapping your sausage with bacon. During this step you will want to give the bacon a bit of a pull as you wrap it so that you don’t need toothpicks to hold it together. Easy right… I always recommend thin or regular sliced bacon for this as it cooks and renders it’s fats faster. Next, apply your BBQ rub. We used our Postal Barbecue ORIGINAL RUB which you can pick up from our webstore.

With your bacon wrapped sausages prepared, place them on to the grill using indirect heat. We will be cooking these between 275F-300F. Lastly add in your favourite hardwood to the coals to add some nice smoky flavour to the bacon.

While your bacon wrapped sausages are cooking, begin to prepare your balsamic infused caramelized onions. To make this you will need a few onions – you will want to use 1 medium onion per sandwich (if making sandwiches). Thinly slice the onions then place them into a skillet set on low with a nob of butter and give them a mix. Next add in your brown sugar to add a little bit of sweetness followed but the balsamic reduction to taste. The balsamic will add a nice tang which compliments the richness of the bacon and sausage.

Once the bacon wrapped sausages have reached 165F internal tempreture they are done and you can pull them but my personal preference is to take them to 175F to allow the bacon to firm up a bit more and help with them becoming more easily bite through. Once they are off the grill, build your sandwiches with the onions and top it with some hot pickled banana peppers and you’re done!
